I've done nearly every recipe and all have been amazing. Scary a bit to trust it at the low temperatures but a couple recipes-into the cookbook I had not a question that the next recipe would work. For the comment earlier asking about the uncovered chicken & potatoes recipe: Keep it uncovered as stated. The other recipe with the mushrooms is going for a creamier sauce therefore keep it covered to retain the liquid. The chicken & potatoes is going for crispness of the potatoes & chicken skin. Though the skin crisps up the interior stays amazingly juicy. Stand-out best recipes (IMHO) are the slow cooked turkey breast, slow fry pork loin & overnight cooked cheese cake. Those recipes alone make this cookbook a winner.
I've made several of these recipes. Not a loser in the bunch. Especially good is the English Toffee sticky pudding.Best I've ever made. The roasts are so flavorful And slow cooking is easy. I also did the slow roasted chicken with potatoes. Not an error. Delicious!
I'm concerned that one recipe for Slow Roasted Chicken w/ Potatoes and Herbs doesn't say to cover the chicken while cooking, but the Slow Roasted Chicken w/ Sun Dried Tomatoes and Wild Mushrooms does. I've looked for ways to contact the author and any errors the book may have with no luck. Is there anyway to find out if both recipes should have the chicken covered while cooking?
